This is the first uninterrupted week at home in a while, and will likely be the last until later in the month. Between conferences, rallies and doctor’s appointments, there is not much of a chance for four nights of dinner at home until deep into May.
I was forced to call an audible today at Wegmans. I intended to make poached chicken with pomegranate orzo (which you can link to via my Pinterest board), but I was informed by the produce staff that the fruit is not in season and there were no seeds for sale. Soooooooooo…I pitched that. If I were to guess, we’re probably going to do the clam-miso soup featured in this month’s edition of Bon Appétit.
With that in mind, here’s what is on tap for dinner this week:
- Yogurt-marinated chicken with mushrooms and sweet potatoes
- Soba noodles with sweet ginger scallion sauce
- Spicy chicken thighs with rhubarb-cucumber salsa and roasted potatoes with lemon
- Miso clam chowder
